Healthy meal idea: Roasted vegetable quinoa salad

There is something intriguing about anything labeled a ‘superfood’

Personally, I like anything super, so after reading about its fantastic nutritional benefits, I decided to give quinoa a try.

So what makes this little grain so super? Quinoa (pronounced keen-wah) contains more protein than any other grain. It’s also gluten free and a great source of fibre, folate, magnesium and vitamin B6.

Now since we’re going super, I decided to combine quinoa with hearty vegetables roasted in sea salt, olive oil and rosemary. The combination is deliciously healthy – even my teenage nephew said so!

Roasted vegetable quinoa salad

Ingredients (Serves 4, or 6 as a side dish)

½ butternut pumpkin, diced
1 small zucchini, diced
1 red capsicum, diced
½ red onion, sliced thickly
1 punnet cherry tomatoes, whole
3-4 fresh rosemary sprigs
6-8 mushrooms, quartered
Olive oil
Sea salt and pepper
100g Feta, diced
1 cup quinoa
2 cups vegetable stock


  • 4 tbs balsamic vinegar
  • 2 tbs olive oil
  • 3 cloves garlic, minced


  1. Place the pumpkin, zucchini, capsicum, onion, tomatoes and rosemary onto a baking tray. Drizzle with olive oil and season with freshly ground sea salt and pepper. Roast in the oven for 30 minutes at 180oC, turning halfway. Add mushrooms at the halfway mark.
  2. Prior to cooking quinoa, rinse well in a strainer. In a medium saucepan bring stock to the boil, add quinoa and bring back to the boil. Reduce heat, cover, and simmer until the water has completely absorbed (about 15 minutes). Allow to cool before fluffing with a fork.
  3. Combine dressing ingredients well.
  4. Place quinoa in a large bowl, top with roasted vegetables and feta, and season with dressing.
